Made this for dinner the other night, delicious; Gnocchi With Spinach and Basil Sauce Gnocchi 2 1/4 pounds potatoes chopped & peeled Salt 1 tbsp chopped basil 2 cups whole wheat flour Water/ oil if it gets to dry Basil Leaves to garnish
1) cook the potatoes in boiling water until tender, mash then press through a strainer. Stir in basil and gradually add flour, mix until soft dough adding oil/water if too stiff or flour if too wet
2) cool, knead dough with flour, divide into quarters and then roll into coils about 1" in diameter, cut into 3/4 inch pieces, place on a floured tray, press with a fork, and toss in the fridge for at least 10-15 minutes
4) cook in boiling water for 2-3 minutes, or until they float to the top, drain, rinse
Sauce 1.5 tbsp olive oil 1 stick celery, chopped 3 tomatoes, chopper 1.5 tbsp tomatoe paste 5 cups spinach (I used the frozen stuff because I'm lazy) 3 tbsp chopped basil 3 cloves garlic crushed pepper
Heat olive oil, celery, garlic until soft. Add rest of ingredients and cook on medium 10-15 minutes until it the excess liquid cooks off. Season with basil and pepper.
Rest is easy, gnocchi + sauce, maybe a little salt. Enjoy.

Thanks for posting this, I've always thought that gnocchi was really intimidating, but I might just try this...

Gnocchi are really superlative (and colorful) when made with sweet potatoes or pumpkin. Resist the temptation to add too much flour, or you will end up with little leaden balls of evil.
