recipe #1 seitan (i tweaked this from michael weber's recipe. this is doubled with some small changes)
1 1/2 cups vital wheat gluten
1/4 cup garbanzo flour
1/4 cup nutritional yeast
cumin, paprika, garlic powder, sage, whatever else trips your trigger to taste
1/3 cup bragg's liquid amino or soy sauce or tamari
1/3 cup canola oil
1 cup water
preheat the oven to 350 degrees
mix your dry ingredients and wet ingredients separately and then combine them. it'll make a dough. if you're making a thing you'd need patties for (like beer battering! or country frying) make patties. for this we're going to crumble this up so spread it out in a large baking dish so that it's about an inch thick. pour on a cup-cup and a half of vegetable broth. put in the oven and bake for 45-60 minutes. it'll be firm yet not too firm when it's done.
recipe #2 facon. works with both tempeh and tofu. i prefer tofu simply based on texture.
slice your protein up really thin and toss in a frying pan with a little bit of canola oil. add a mix of two parts braggs liquid aminos or soy sauce to every one part liquid smoke. as well as a pinch of nutritional yeast and a drizzle of maple syrup. fry until a little crispy.
Recipe #3 A delicious sandwich incorporating the above recipes.
take you completed seitan and crumble it. then mix it with bbq sauce. i would make my own but i am lazy. thus i generally go for sweet baby rays. mmm. now that that's all crumbled and bbq-sauced put it on bread with some of the tofu facon. i also like to put put grilled mushrooms and some sliced avocado on this sandwich as well as a sprinkling of nooch and a liberal drizzling of sriracha.
Recipe #4 Beer battered seitan
make the seitan recipe but make it in patties. it'll only take about 45 minutes to bake and you'll wanna use a little more veggie broth (1.5-2 cups you'll want them 3/4ths of the way covered in broth when you start cooking them)
for your beer batter!
you'll need:
1 32oz bottle of tecate. half for the batter, half for your enjoyment.
2 cups of flour (i go 1.5 whole wheat .5 garbanzo but i am into flours and nutrients and all that shizz)
hot sauce of the mexican variety. i like tapatio. cholula is also good. sriracha is a quality sauce but goes better in pbr and with something a little saucier than what you're making here.
