You will need:
1 carton of veggie broth
Soy milk (plain)
Veggie oil of choice (corn or canola work best)
Mushrooms (I used crimini)
Celery
Onion
Carrot
Flour (I like working with whole wheat flour best)
Ketchup/catsup
Braggs or Soy sauce
Salt
Bag of hashbrowns
1 container of vegan sour cream (I only ever find Tofutti)
Shredded egan cheese of your choice (I used a grated up block of Teese)
Preheat your oven to 350*.
Step One: Make your vegan cream of mushroom/assorted veg soup.
Take 1/8 cup of veg oil, 1 cup plain soymilk, 2 cups veggie broth, 1/4th cup flour, and a handful of chopped up mushrooms, some chopped up onion and celery and a handful of grated carrots. Add in a bunch of pepper, garlic powder, and nooch. Cook until all the veg softens. I made mine overnight in my slow cooker and had to move over to the stove and add some cornstarch mixed into some cold water to get it to thicken up enough. I don't know if that's necessary if you're cooking it on the stove.
Step Two: Oil or spray a big glass baking pan (2 quart or 9x13) and fill with about 2 pounds of frozen hashbrowns. (Usually one bag) and dump your cream of mushroom over the hashbrowns.
Step Three: Making some cheese sauce. (This is a "recipe" I got from Michael Throwaways. Thanks buddy!) Heat up some soy milk and add in about a cup of nooch and like two handfuls of flour. Spoon in a couple tablespoons of ketchup/catsup and add in some bragg's or soy sauce and some salt. Taste. Play with adding nooch, bragg's/ss, and salt until you get the flavour you're looking for.
Step Four: Dump your cheese sauce over the cream of mushroom and hashbrowns. Then spoon your sour cream equivalent out over this. Mix all of this together so everthing is evenly distributed. Then spread your vegan cheeze shreds over the top and bake for about an hour.
Step Five: After that hour, turn your oven up to 500* and cook another 5-10 minutes to make sure your shreds on the top melt.
Step Six: Take out of the oven and eat. If you share it with your friends, they will tell you how awesome it is.
