Vegan margarine of choice
1 packet of cinnamon sugar graham crackers
1 ½ containers of Tofutti Better Than Cream Cheese
1 package of soft tofu
1/3 cup soy milk
1/3 cup corn starch
Splash of vanilla
¾ cup of powdered sugar
Squeeze of lemon
2 eggs equivalent of egg replacer/water mix
Splash of vegetable oil
2-3 Granny Smith Apples
Brown Sugar
More Soymilk
Step One: Preheat your oven to 350*. Smush up the graham crackers and melt some of your vegan margarine of choice. Dump ground up crackers in your dish, then add the marge to make your crust. It’ll be all moist and clumpy. Make sure it covers the bottom of the pan.
Step Two: Break up your tofu and put it in a mixing bowl. Then add your Tofutti, egg replacer, soy milk, corn starch, vanilla, powdered sugar, lemon, and oil. Mix that all up with an electric mixer. If you don’t have an electric mixer, the blender would work. If you have neither, whisk and fork smush it to death.
Step Three: Pour your mix over the crust.
Step Four: Chop up your Granny Smiths into little chunks. Not too small or else they’ll get unpleasantly mushy in the oven. Melt some more of your marge and mix some brown sugar in with that until it makes like a gritty brown paste. Toss your apples in it so they’re all adequately coated in the mixture and then spoon them out over the top of your uncooked cake so that they cover most of the top.
Step 5: Bake for about 45 minutes or until it gets kind of firm.
Step 6: Melt up some more marge. And make some more of that sugar paste then add some soymilk to make a thin sauce. Mix some corn starch in with some water and pour a little into your heated caramel sauce to thicken it. Mix well.
Step 7: When cake is done baking, pour this caramel sauce over the top and let the whole thing cool.
Step 8: Eat and enjoy greatly.
