VEGAN VANILLA CUPCAKES WITH VANILLA BUTTERCREAM FROSTING
PART A: CUPCAKES
ingredients:
1 cup soymilk
1 tsp apple cider vinegar (buying a bottle of this is a great investment)
1 1/4 cup flour
2 tbsp corn starch
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup canola oil
3/4 cup sugar
2 1/4 tsp vanilla extract
directions:
1. whisk the soymilk & vinegar together & let it set for five minutes
2. mix together the dry ingredients and stir reallyreally well with a fork. (to add some air to it and make it fluffy) then make a well in the middle.
3. meanwhiiiiiile, add the wet ingredients into the cup that you used for the soymilk & vinegar and mix that together real good. then poor the wet mixture into the dry mixture and whisk it up real well until all the lumps are gone.
4. grease a cupcake pan or use the cupcake liners, and fill it about 2/3 of the way full.
5. bake at 350 degrees fahrenheit for 22-20 minutes.
makes a dozen cupcakes.
PART B: FROSTING
ingredients:
1/2 cup margarine
1/2 cup shortening (or you can use 1 cup of margarine, or 1 cup of shortening)
3 1/2 cup powdered sugar
1 1/2 tsp vanilla extract
1/4 cup soymilk
1. beat the margarine/shortening until fluffy. (good idea to let it sit out on the coutner for a while so it gets soft)
2. add the powdered sugar and beat that in for about 3 minutes.
3. add the vanilla and the milk. beat for 5-7 minutes until fluffly.
makes: a fuckton of frosting.
PUT PART B, ON TOP OF PART A
AND OM NOM NOM THAT SHIT.
VEGAN CHAI FROSTING
ingredients:
1/2 cup margarine
1/2 cup shortening (or you can use 1 cup of margarine, or 1 cup of shortening)
3 1/2 cup powdered sugar
1 1/2 tsp vanilla extract
1/4 cup soymilk
2 chai tea bags
directions:
1. microwave the 1/4 cup soymilk and steep the tea bags for like 10 minutes. then put it in the fridge to cool.
2. meanwhiiiile, beat the margarine/shortening until fluffy. (good idea to let it sit out on the coutner for a while so it gets soft)
3. add the powdered sugar and beat that in for about 3 minutes.
4. remove the tea bags once it’s cool and add the milk & the vanilla. beat for 5-7 minutes until fluffly.
MIX IT UP: VEGAN CHOCOLATE CHAI FROSTING
same as above, but add 1 1/2 tablespoons of cocoa powder in with the powdered sugar.
put it on top of some vegan vanilla cupcakes,
and OM NOM NOM THAT SHIT!
